You will need:
- 60ml Olmeca Altos Blanco Tequila
- 15ml Cointreau
- 15ml Lime Juice
- 30ml Cream of Coconut (not coconut cream)
- Sweetened shredded coconut for the rim
To make:
- Toast the coconut - remove from heat & place it in a single layer on a small plate
- Dip the edge of the glass into cream of coconut, then into the toasted coconut
- In a shaker filled with ice, place the tequila, Cointreau, lime juice & cream of coconut. Shake until cold.
- Strain into the glass with the coconut rim
